Calabacita con Pollo

Ingredients

3 teaspoons vegetable oil

5 chicken thighs

2 teaspoon salt

2 teaspoon pepper

2 teaspoons Garlic powder

2 medium squash chopped

2 medium yellow squash

1 1/2 cups frozen whole-kernel corn, thawed

1/2 can tomatoe sauce

1 1/2 cup chicken broth


Instructions


Heat oil in a medium pan over medium-high heat. Cube chicken and add salt, pepper and garlic to chicken and cook 15 minutes, turning to brown on all sides.


Add the chicken broth, tomatoe sauce, and all veggies. Cover and cook 20 minutes or until vegetables are tender.
