In a pan heat up your lard and add your cup of beans and refry. I make a pot of pinto beans for the week and refry as needed, but you can use canned beans if you would like. I also like to use my hand blender to get the beans as smooth as possible.
Take 1 tbsp of oil and fry your tortillas on both sides, dip in your beans and fold Onto plate.
In the same pan add the other tbsp of oil and fry your eggs ans sprinkle with salt. Once your eggs are done you can add the eggs to the top of your enfrijoladas with Queso fresco.
