Pozole Verde

INGREDIENTS

2 pounds boneless chicken

1pound tomatillos husked and washed

2 Tbsp chicken knor

1 large onion

2 jalapeño peppers

2 Serrano pepper

2 pablano pepper (deseeded)

2 cloves garlic

4 cups chicken broth

1 bunch fresh cilantro,stems and leaves

1 big can white hominy drained and rinsed

to serve: limes, radishes, jalapeños, Cabbage.

INSTRUCTIONS


In a large pot , add chicken and half a onion with 8 cups of water let boil Uncovered. The chicken should take 20 min to cook.

In a separate pot boil tomatillos,jalapeños,Serrano,pablanos in 2 cups of chicken broth. once they are soft transfer all to blender, add half a uncooked onion and 2 cloves of garlic, 2 tbsp of knor chicken flavor and a tbsp of salt. Blend all.


Once your chicken is cooked take the chicken out of pot and shread. Add chicken back in pot with the blended peppers and homony. Cook on med heat for 2 hours.
